Strawberry Avocado Salad

Summer-time, well almost anyways - wishful thinking on my part! We eat this salad all summer long! It is soooo fresh and yummy! The strawberries and avocados compliment the dressing perfectly. This is the salad's most basic version. For special occasions - or even just for times when you actually plan accordingly and manage to put all the right ingredients on your grocery list, try adding red onions, feta or Gorgonzola cheese, and walnuts. Or make it a meal and add grilled chicken! Super delish! It's perfect for your Mother's Day brunch, lunch, or even dinner. Don't you think?

Strawberry Avocado Salad

Basic Ingredients

1 bunch of leaf lettuce, washed, torn, and drained
1 pound of strawberries, cleaned and sliced
1 medium red onion, sliced into rings  (I find it easier to pick the onions out if they are sliced in rings and not chopped)
2-3 avocados, sliced
1 recipe Garlic Dijon Red Wine Vinaigrette

Try adding:

2- oz. feta or gorgonzola or feta cheese
1/4-1/2 cup pecans or walnuts
2-3 grilled sliced chicken breasts

Directions

Place lettuce in a large shallow bowl. Layer the rest of the ingredients over the top. Serve with Garlic Dijon Red Wine Vinaigrette.

Enjoy! Wishing everyone sunshine today!
