Ultimate Rice Krispie Treats


Seriously, Rice Krispie Treats, you ask?!?! YES! Rice Krispie Treats, but these aren't your average krispie treats! These are super thick, soft, and chewy - really the super hero of treats! Truly delish and just how Momma Daisy makes them! Perfection and just in time for those lunch boxes we will all be packing or for sharing with a glass of milk around the table after school! 

Ultimate Rice Krispie Treats
*Recipe by Momma Daisy

4 1/2 Tablespoons butter
1 (16 oz) bag of  regular marshmallows
6 cups of  Rice Krispies

Grease 8x8 square pan with cooking spray or butter.

Melt butter and marshmallows together.

Stir in Rice Krispies. Keep stirring until all those Krispies are evenly coated!!!

Pour into prepared pan. Spray spatula or fingers with cooking spray and press mixture until evenly spread. Cool and cut into squares. Enjoy!

Pineapple Chicken Fajitas


While there is still time to fire up those grills, I thought I might share one of my most requested recipes!!  Not to worry if you don't have a grill, you can still make these - but it is so nice not to have to cook in the kitchen  during the warmer months. As a matter of fact, in the winter when my grill is piled under the snow, I still make these on the stove top in a skillet - but I imagine an inside grill or under the broiler word work just as well. Now, pineapple...in  fajitas, you ask?!?! Trust me! It adds a sweetness to the fajita that is oh-so-good! I really think you'll love it!

Pineapple Chicken Fajitas
*Recipe by Crazy Daisy

4 lbs boneless skinless chicken breasts, cut into strips
6 medium peppers (your choice of green, sweet red, yellow, and orange peppers) cut into strips
1 medium onion, sliced into thin wedges
4 tablespoons fajita seasoning (I use McCormick)
2 tablespoons honey
1-2 teaspoons garlic powder
1/2 teaspoon salt
1 (20 oz) can pineapple chunks, drained and juice reserved
couple drops of Louisiana Hot Sauce, or to taste, if you like heat, add more
shredded cheese, sour cream, and salsa for serving

*Note - this recipe can be halved easily. As is, it feeds 7-8 people. 

Drain and measure pineapple juice. Add water to make 1/2 cup. Add fajita seasoning, honey, garlic powder, salt, and a couple drops of Louisiana Hot Sauce, stir well. Pour into gallon-sized zip-loc bag. Add chicken, close bag and squish a little until mixed well and chicken is coated evenly. If you have time let marinate in refrigerator for up to 4 hours (but even 30 minutes helps). Using a grill pan, grill chicken over medium-high heat until juices run clear and chicken is browned. (My chicken didn't brown very well this time because I used a cookie sheet instead grill pan and the liquid didn't burn off quick enough for browning.) If you don't have a grill, heat a tablespoon of olive oil in a large skillet and cook over medium-high heat.

Meanwhile, for the veggies, either on the grill or in a skillet heated with 1 tablespoon of olive oil, cook peppers and onions for a few minutes.Add pineapple and cook until warmed through. We like our veggies warm and tender-crisp - but cook as you like.

Serve with warm tortillas, cheese, sour cream, and salsa.

Buffalo Chicken Wing Dip


Are you ready for some... football? Most of you are probably thinking its not quite time for that yet - but at my house it's game time. Fantasy football drafts, pre-season games, ESPN (Farve - what's he going to do?)... once again football is everywhere. If any other football widows need the support of my Football Wives Club let me know! I guess, if you can't be them, join them - and with some yummy snacks too! This Buffalo Chicken Dip is one of our favorite game time treats. It's a super delicious dip with layers of  buffalo wing chicken, cream cheesy ranch, and gooey melted cheese. Dishes like this define football food.

Buffalo Chicken Wing Dip

5 or 6 chicken breasts, baked, cooled, and shredded
1/2 of a 12 oz. bottle of Frank's RedHot Buffalo Wings Sauce
1/2 of a 16 oz. bottle of ranch dressing
8 oz. cream cheese
2 cups shredded cheddar

Preheat oven to 350. Spray a 9x13-inch pan with cooking spray.

Mix chicken with Frank's RedHot Buffalo Wings Sauce. Spread in bottom of prepared pan.

Melt cream cheese and ranch together in a saucepan over med-low heat until smooth. Spread over chicken. Cover with shredded cheese. Bake at 350 for about 30 minutes or until hot and bubbly. Serve with tortilla chips. Delish!

*Note - This recipe can be adapted for the crock pot. Mix the everything together and heat in crock pot.

Chocolate Toffee Crunch Popcorn


Gourmet popcorn is one of my favorite treats! Except for the gourmet price, I can't think of anything I don't like about  it. Problem solved - make your own! What a perfect treat for this August heat- NO BAKING required! With a few ingredients and a microwave you are set!

Chocolate Toffee Crunch Popcorn
*Recipe by Crazy Daisy

20 cups popcorn (or two bags microwave popcorn)
1 (8 oz.) bag Heath Bits
1 (12 oz.) bag semisweet chocolate chips (or 2 cups)
1 (11 oz.) bag butterscotch chips, divided
1 tablespoon Canola Oil or shortening 

Spread waxed paper onto over two cookies sheets. Spray with cooking spray to prevent sticking.

Pop corn. You will want to make sure to take out all  of the unpopped kernels. Pour into a very large bowl and add Heath Bits.

In microwave-safe bowl, melt semisweet chocolate chips with one cup of butterscotch chips for 2-2 1/2 minutes stirring every 30 seconds until smooth.

Pour over popcorn mixture and gently stir until combined. Spread onto prepared cookie sheets.

Place remaining butterscotch chips in a zip-lob bag. Place in microwave for 1 minute.  Every thirty seconds, take bag out and use fingers to knead to mix. When smooth, clip a tiny piece of the corner off of the bag and drizzle over popcorn (to quicken this process, place in fridge or freezer). Let dry and break into pieces. Wouldn't this be fun wrapped in treat bags for gifts? Enjoy!

I need to start this week's Tuesday Tastes by apologizing for last week's party blunder! I was visiting my brother in Seattle with my parents and boys. We had an amazing time - my kiddos even saw the ocean for the first time; however, my brother's internet was down the entire time we were away! Thanks for understanding! Felt Playhouse - CSI Project Repost


I have been waiting and waiting to share this with everyone! Not too long ago, I found the neatest little etsy shop, Imaginative Play Toys, that specializes in fabric felt playhouses! Way too cool! They  are made to slip right over a card table (or a PVC pipe frame, if you would rather build one) and are totally portable! There is a theme for every child! You can choose from a cupcakery, petshop, bluebird cottage, train station, post office, animal sanctuary, contstruction site, fire station, and much more! Seriously, you've got to check the store out to see all the themes! They have even added patterns and playhouse kits to their inventory, which was perfect for me because I was willing to sacrifice a little, maybe a lot, of time to save some money. I purchased a cottage kit, complete with pattern, fabric, thread, and iron-on adhesive, because I knew I wouldn't be able to find all of the necessary materials in my little corner of Wyoming. I was able to choose all the colors and the pattern was easy to follow! AND it's finally finished!!! Bare with me, that darn wind would just not cooperate while I was snapping my pictures!




Have I mentioned these playhouses are interactive? Felt letters slide into the mailbox, the fruit can be picked off of the the tree and put into the basket, the watering can is removable, and the curtains tie open. How much fun is that?!?!
