Happy Birthday Dr. Seuss (Green Eggs and Ham Candy Pretzel Treats}

Pin It
Friday, March 2, is Dr. Seuss' birthday! By chance, my son was assigned to bring snacks to school and wanted to keep with his tradition of bringing something festive to celebrate his favorite author's special day (he still thinks he's the cat with the tall hat). I had seen these once made with yellow M&M's for April Fools Day, and thought they would be perfect made in green as Green Eggs and Ham. We had a great time making these together (which I love). He is thrilled with the way they turned out and can't wait to share them tomorrow. They are quick and easy and great for last minute treats!!!

Green Eggs and Ham Candy Pretzel Treats

1 pound almond bark
Peanut butter M&M's, larger bag
Stick pretzels

Cover baking sheet with wax paper. Spray with cooking spray.  Place pretzels in pairs spaced evenly across the wax paper. I would aim for 30 pairs, since we ended up with about 30 treats. Separate about 30 green M&M's from the rest of the bag and place in a bowl. Set aside. Melt almond bark as directed. Using a tablespoon, pour almond bark over pretzel pairs. Swirl with the spoon a little to help it puddle in an egg shape. Place M&M upside down in the center (they don't have to be upside down, but I'm a little crazy about details sometimes).  Place baking sheets in the refrigerator until the treats set up. Enjoy!

*Note - you don't have to use baking sheets, and can place the wax paper directly on top of your table. BUT they will set much more quickly and be a little more difficult for sampling fingers to find in the fridge. Trust me, I know.

Confetti CandyLand Popcorn

My six year old, created his own recipe, Confetti CandyLandy Popcorn, for the Wyoming Chocolate Festival. He wanted to take popcorn, M&M's, mini gummi bears, and pretzel pieces, mix them all together and cover them with white chocolate. He did everything except melt the chocolate. It was great math practice and he measured and counted everything out! This was his display (his poor little fingers hurt from making the pinwheels).
Isn't it funtastic? He won Best Presentation and 2nd place in his category; Everything Else. I love how the sweet and salty mix together and the gummi bears add a fun little twist! Are you wondering how to make his yummy creation?
Here's the recipe:

CandyLand Popcorn
*Recipe By Little Crazy of Crazy Daisy

20 cups popcorn, kernels removed
2 1/2 cups M&M's
2 1/2 cups mini gummi bears
2 1/4 cups of pretzel sticks that have been broken into 4 or five pieces
2 bags of white candy melts

Line two cookie sheets with wax paper. Spray wax paper with cooking spray. Set aside. Mix popcorn, candy, and pretzel pieces together in a LARGE bowl  we used a roasting pan. Melt candy melts as directed on package. Pour melted white chocolate over popcorn mixture and mix well to coat evenly. Spread onto prepared baking sheets. Let dry. Enjoy.

Cinnamon Honey Butter

I love honey butter, so you can bet I was excited when I found this recipe! It is so easy and probably the best I have ever had. I love it with warm cornbread, but it would be wonderful on toast, bagels, pancakes, and waffles as well! I don't think you will be disappointed!

Cinnamon Honey Butter
* Adapted from Tidy Mom

1 stick of butter, soft (1/2 cup)
1/2 cup honey
1/2 cup powder sugar

In a mixing bowl, beat honey and butter together until combined. Add powder sugar and cinnamon and beat until mixed evenly. Enjoy! Store any unused portion covered in the refrigerator. Set out to soften before serving!
