Ultimate Sweet and Sour Party Meatballs *EASY*


My boys fell in love with these meatballs at a friends's birthday party! While they were pretty good, they were a little too sweet for me, and I wanted to add  my own tangy twist to the recipe. Cranberry instantly came to mind - and low and behold there was a recipe right on the can of cranberries for Ultimate Party Meatballs!!! Someone else beat me to it! While I wasn't the first to think of this recipe, maybe I will be the first to share the idea with you. I have to say even with as much as my family liked the original meatballs, they adore this tangy slightly less sweet version. If meatballs aren't enough, try this recipe using Little Smokies instead, just as shown here. Do you have a recipe like this? I would love to know which flavors you use!

Ultimate Sweet and Sour Party Meatballs (Easy)
*adapted from Heinz and Ocean Spray

1 (2 lb.) bag frozen meatballs
1 (12 oz.) jar of Heinz Chili Sauce
1 (14 oz.) can of jellied cranberry sauce

Crock Pot - Place meatballs into Crockpot.

In a bowl, stir together chili sauce and cranberry sauce until well combined. If lumps persist, microwave for 15-30 seconds and stir. Pour sauce over meatballs. Set Crockpot on High and cook for 2 hours. Stir occasional. Turn to either warm or low and serve. I usually serve these right out of the Crockpot with a little dish of toothpicks close by - everything tastes better on a stick, right?!?!

Stovetop - (I have never tried this method before, but according to Ocean Spray and Heinz, it works...)

Place sauces in large saucepan and cook over medium-low, stirring until smooth. Add meatballs, cover and cook for 15 minutes or until heated through, stirring occasionally.


 Wasn't that easy? Pretty tasty - and perfect football food!!!

Coconut Almond Chex Mix (Goblin Grub)


This isn't an original recipe, in fact, it's been around forever and you may already have this recipe in your stash. But, I had to share it with you just in case you haven't ever had the chance to try it before - its simply that good. It has a zillion names, Chewy Chex Mix, Coconut Almond Chex Mix, and many more. My favorite, especially at this time of year is Goblin Grub - fitting for Halloween, don't you think? My little ghouls gobble it right up, and I am sure yours will to. And just to make things better, it's just as easy to make as it is tasty!

Coconut Almond Chex Mix (Goblin Grub)

6 1/2 cups Rice Chex
4 1/2 cups Golden Grahams cereal
1 cup sliced almonds
2 cups coconut
3/4 cup (1 1/2 sticks) butter - not margarine
1 cup sugar
1 cup light Karo syrup
1 teaspoon vanilla

Spread wax paper over counter tops or on table top. Spray with cooking spray.

Find a very large bowl and combine cereals, almonds, and coconut. Set aside.

In a soup sized kettle (seriously, you want a HUGE pot, or you will end up with sticky goo all over your stove top), combine butter, Karo Syrup, and sugar. Bring to a boil and then reduce and cook for about three minutes.

Remove from heat and stir in vanilla. Pour over cereal mixture and stir well until everything is well coated. Make sure to do this while the syrup mixture is still hot.

Spread onto wax paper and stir every 10-15 minutes until dry. Keep in an air tight container. I find a large baggies works well. Serve from a from a bowl or wrap into treat bags as gifts or pre-portioned servings.

Soft Pumpkin Cookies with Pumpkin Spice Cream Cheese Frosting


It seems the colors are finally changing and fall is in the air! Hooray! This is one of my very favorite times of the year. I love the crisp morning air, beautiful colors, and amazing fall flavors! PUMPKIN! Yummy! These soft cookies are so very delicious. They remind me of a pumpkin roll, but in a cookie! I keep pumpkin on hand all year so that I can enjoy these and other yummy pumpkin recipes anytime. Give them a try and let me know what you think!

Soft Pumpkin Cookies with Pumpkin Spice Cream Cheese Frosting
*Recipe by Crazy Daisy

1 cup sugar
1 cup shortening
3 cups brown sugar
4 eggs, slightly beaten
1 (29 oz.) can pumpkin, reserve 1/4 cup for frosting
2 1/2 cups white flour
2 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon lemon juice
1 teaspoon ginger
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons vanilla
1 1/2 cups chopped nuts (optional)
1 recipe for Pumpkin Spice Cream Cheese Frosting, below

Preheat oven to 375 degrees. In a mixing bowl, cream sugar, shortening, and brown sugar. Add eggs, mix well. Add pumpkin, mix well. 

In a bowl, whisk together flours, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg. Pour into wet ingredients and mix well.

Add lemon juice and vanilla, stir well. Mix in nuts, optional.

Drop by 1/8 cup rounds onto an ungreased cookie sheet. Bake for 10-12 minutes or until set in the middle. When pressed gently, the tops will spring back just like a cake. Cool on a wire rack and then on wax paper. After completely cool, frost with Pumpkin Spice Cream Cheese Frosting.

Pumpkin Spice Cream Cheese Frosting

8 oz. cream cheese, softened
1/4 cup butter, softened
1/4 cup pumpkin
1/2 teaspoon vanilla
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
3 cups powdered sugar

Cream cream cheese, and butter until smooth. Add pumpkin and mix well. Stir vanilla, ginger, nutmeg, and cinnamon, mix well. Add powdered sugar gradually. Mix well.

A little thin around here

Happy Day, everyone! I am sure you've noticed that things have been a little thin at Crazy Daisy. September has been an extremely difficult month. My grandmother fell ill and has required a lot of extra care. Now, the stars are shining brighter as heaven has a new angel. She will be forever missed, but I know she is out there loving and cheering for us all. So please bear with me as I get things rolling again. I am just about ready to share one of my most favorite fall recipes, Soft Pumpkin Cookies with Pumpkin Spice Cream Cheese Frosting... they are amazing!
