Tortilla Relish

Who doesn't love a good party? And a party can't be good without good food, right!?! What's better than food that tastes amazing and is actually healthy? That's what I love about this dip! It never fails, I am always, ALWAYS asked for this recipe- and for those of you who have been waiting... I finally delivered! Fun, fresh, and perfect for any party!

Tortilla Relish

1 1/2 cups corn, frozen works well or cut kernels from grilled or boiled corn on the cob
1 1/2 cups sliced black olives
1 1/2 cups  chopped red pepper
4 tablespoons diced onion
4 grated garlic cloves
2 teaspoons oregano
4 tablespoons lemon juice
6 tablespoons olive oil
2/3 cups apple cider vinegar
salt and pepper to taste (optional)
4 chopped avocados

*Note- Sometimes I substitute tomato for the red pepper or use half tomato and half red pepper.

Combine garlic, onion, oregano, lemon juice, oil, and vinegar in a shallow dish, like a pie plate. Stir well. Add corn, olives, and red pepper. Stir to combine. Refrigerate several hours or overnight. Just before serving, add avocados, add salt and pepper to taste if desired. Serve with tortilla or pita chips.

I hope you all enjoy this recipe as much as my family and friends do!!!! I was hoping to post my recipe for blueberry pie soon, my house smelled so very yummy last night. However, it was eaten before I could even snap a shot!  Maybe next time!

Felt Playhouse Reveal (and Giveaway)

I have been waiting and waiting to share this with everyone! Not too long ago, I found the neatest little etsy shop, Imaginative Play Toys, that specializes in fabric felt playhouses! Way too cool! They  are made to slip right over a card table (or a PVC pipe frame, if you would rather build one) and are totally portable! There is a theme for every child! You can choose from a cupcakery, petshop, bluebird cottage, train station, post office, animal sanctuary, contstruction site, fire station, and much more! Seriously, you've got to check the store out to see all the themes! They have even added patterns and playhouse kits to their inventory, which was perfect for me because I was willing to sacrifice a little, maybe a lot, of time to save some money. I purchased a cottage kit, complete with pattern, fabric, thread, and iron-on adhesive, because I knew I wouldn't be able to find all of the necessary materials in my little corner of Wyoming. I was able to choose all the colors and the pattern was easy to follow! AND it's finally finished!!! Bare with me, that darn wind would just not cooperate while I was snapping my pictures!




Have I mentioned these playhouses are interactive? Felt letters slide into the mailbox, the fruit can be picked off of the the tree and put into the basket, the watering can is removable, and the curtains tie open. How much fun is that?

Curried Kabobs


Not only are these kabobs one of my very favorite summer recipes, they take me back to childhood summers! Momma Daisy made these and I always thought they were such a treat! Besides being served on a stick (which makes everything a little more yummy), they are made with marinated beef, pineapple, green peppers, red onions, mushrooms, and anything else your heart may desire. So fresh! We love them served with rice and ice cold lemonade. 

Curried Kabobs

2 lbs beef cut into 2 inch cubes

Marinade:
1/3 cup lemon juice
1/4 cup  Canola oil
2 tablespoons onion, grated
1 clove garlic, crushed
1/2-3/4 tablespoons salt
1 teaspoon ginger
1 1/2 teaspoon curry powder
1/2 teaspoon cayenne pepper

Fresh:
16 mushroom caps, cleaned
2 large green peppers, cut into 1 inch pieces
3 red onions, quartered
Pineapple, cut into 1 inch pieces or substitute 16 oz can chunk pineapple
16 cherry tomatoes

Method:
Combine marinade ingredients in a large glass dish or gallon size zip-loc bag. Add beef and marinate for 4 hours.

If using wooden skewers, soak for 30 minutes before preparing kabobs. Alternate meat, veggies, and fruit, on skewers. Grill over medium heat for 15 minutes, or until done turning several times. These can also be made under the broiler - just set oven rack 2-3 inches below broiler. Serve with rice.

These are so much fun because they can be tailored to suite everyone's taste! We leave some without tomato and onion for my boys and add extra meat for my husband. I must say, pineapple, especially fresh, seems to be everyone's favorite! Change it up and make it yours - what are your favorite foods to eat on a stick?

Crazy Star Quilt


I have been so excited to share this with you, which required snatching it from Momma Daisy (Christmas gift) for a few minutes in order to snap a few pictures, so it took a little while. BUT here it is!!! It was my very first quilt and I adore it! It only takes one look to know that it isn't your typical granny quilt. You could say it puts the Crazy in Daisy! Mystery solved - except for figuring out exactly what it is that makes me tick this way! Aren't the colors

yummy??? They remind me of a bowl or sherbet! Way too much fun!!! And the fabric, mostly batik, has so much detail -



Can you see the dragonflies? If you look closely at the stitching



you can find butterflies... do you see it? Didn't my wonderful friend Marge Nield, do such an amazing job with the machine quilting? Every star has a different pattern stitched around it, BEAUTIFUL!!! Just for fun, let me show you the back,



isn't the color amazing? And I had to put that one extra star somewhere! As I mentioned, this quilt was a gift for Momma Daisy! Even with all it's craziness, it's perfect! Momma Daisy is a bright star always shining in my life -what a way to share that thought! And the craziness is all me! Before I forget, the pattern is Buggy Barn's Crazy Star pattern. I love Buggy Barn patterns! In fact, I am working on truck/tractor quilts for my boys right now. Thanks for letting me share! I hope you enjoyed your visit!

Tuesday Tastes (16)


Welcome back to Tuesday Tastes! Before we get started, I thought it would be fun to announce last week's People's Choice Winner! All of the recipes were fabulous, but this is the one most voted for!

Chicken Artichoke Pasta


Pasta... who doesn't love pasta? I love it even more when I find a healthy pasta dish for my family to enjoy! This Chicken Artichoke Pasta is packed with veggies and  has a light oregano, garlic, sauce that adds yummy flavor. I use heart-healthy pasta and serve the Parmesan Cheese on the side so everyone hascontrol how much is added to their serving. Usually my family prefers shredded Parmesan, but with this dish, we preferred the canister version... I wonder what which will better suit your tastes?

Chicken Artichoke Pasta
* adapted from Taste of Home

6 oz. uncooked farfalle (bow-tie) pasta 
1 lb. boneless skinless chicken breasts, cut into thin strips
3 teaspoons olive oil, divided
1/2 cup fresh broccoli florets
1/2 cup sliced mushrooms
1/2 chopped red pepper (halved cherry tomatoes could be substituted)
2 garlic cloves, minced or grated
1 (14 oz.) can water-packed artichoke heats, rinsed, drained, and quartered
1/2 teaspoon salt
1/2 teaspoon dried oregano

2 teaspoons all-purpose flour
1/4 cup reduced-sodium chicken broth
1/3 cup white wine or reduced-sodium chicken broth
1 tablespoon minced fresh parsley
Parmesan Cheese


Cook pasta al dente, according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook chicken in 2 teaspoons oil over medium heat until no longer pink. Remove and keep warm.

In the same skillet, cook and stir broccoli in remaining oil for 2 minutes. Stir in the mushrooms, red peppers, and garlic; cook 2 minutes longer. Add the artichokes, salt and oregano; heat through.

Combine the flour with broth and wine or additional broth until smooth; stir into the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add parsley and reserved chicken.

Drain pasta; add to chicken mixture and toss to coat. Sprinkle with cheese. 

Healthy! Yummy! What more can you hope for?
